Gochujang
This spicy and flavorful Korean-inspired stir-fry features tender chicken, fresh vegetables, and the bold taste of gochujang sauce.
Ingredients - Serves 4
- Cooked rice - 4 cups, for serving
- Salt and pepper - To taste
- Cooking oil - 2 tablespoons
- Green onions - 4, sliced
- Broccoli florets - 1 cup
- Carrot - 1, julienned
- Bell pepper - 1, sliced
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Sesame oil - 1 tablespoon
- Honey - 1 tablespoon
- Soy sauce - 2 tablespoons
- Gochujang sauce - 3 tablespoons
- Chicken breast - 2, boneless and skinless, sliced
Let's Get Started
- In a bowl, combine the gochujang sauce, soy sauce, honey, sesame oil, minced garlic, and grated ginger. Mix well.
- Add the sliced chicken to the bowl and toss to coat the chicken in the marinade. Let it marinate for 10 minutes.
- Heat the cooking oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced bell pepper, julienned carrot, and broccoli florets. Stir-fry for 3-4 minutes, or until the vegetables are crisp-tender.
- Return the cooked chicken to the skillet and pour in any remaining marinade. Stir-fry for an additional 2 minutes to coat the chicken and vegetables in the sauce.
- Season with salt and pepper to taste.
- Garnish with sliced green onions.
- Serve the gochujang chicken stir-fry over cooked rice.
