  1. In a large pot, add the goat meat, chopped onion, minced garlic, grated ginger, chopped scotch bonnet peppers, cayenne pepper, crushed black peppercorns, cloves, bay leaves, thyme, and salt.
  2. Pour in the water and bring to a boil. Reduce the heat and let it simmer for about 1 hour or until the goat meat is tender.
  3. Skim off any foam that rises to the surface during cooking.
  4. Once the meat is tender, add the chopped cilantro and lime or lemon juice. Simmer for an additional 5 minutes.
