Goat Meat Pepper Soup
This spicy and flavorful Nigerian goat meat pepper soup is a traditional dish made with goat meat, aromatic spices, and peppers.
Ingredients - Serves 6
- Lime or lemon juice - 2 tablespoons
- Fresh cilantro - 1/4 cup, chopped
- Water - 6 cups
- Salt - To taste
- Thyme - 1 teaspoon
- Bay leaves - 2
- Clove - 2
- Black peppercorns - 1 teaspoon, crushed
- Cayenne pepper - 1 teaspoon
- Scotch bonnet peppers - 2, chopped
- Ginger - 1 tablespoon, grated
- Garlic - 4 cloves, minced
- Onion - 1 medium, chopped
- Goat meat - 1 kg, cut into pieces
Let's Get Started
- In a large pot, add the goat meat, chopped onion, minced garlic, grated ginger, chopped scotch bonnet peppers, cayenne pepper, crushed black peppercorns, cloves, bay leaves, thyme, and salt.
- Pour in the water and bring to a boil. Reduce the heat and let it simmer for about 1 hour or until the goat meat is tender.
- Skim off any foam that rises to the surface during cooking.
- Once the meat is tender, add the chopped cilantro and lime or lemon juice. Simmer for an additional 5 minutes.
- Serve hot and enjoy!
