Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the diced onion and minced garlic, and cook until the onion is translucent.
  5. Add the ground turkey to the skillet and cook until browned.
  6. Stir in the cooked quinoa, tomato sauce, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
  7. Fill each bell pepper with the turkey-quinoa mixture and place them in a baking dish.
  8. If desired, sprinkle shredded cheese on top of each stuffed pepper.
  9. Cover the baking dish with foil and bake for 30 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  11. Serve hot and enjoy!
