This gluten-free rice noodle stir fry is packed with colorful vegetables and flavorful sauce.
Ingredients - Serves 4
- Green onions - 2, sliced, for garnish
- Sesame seeds - 1 tablespoon, for garnish
- Sesame oil - 1 tablespoon
- Honey - 1 tablespoon
- Rice vinegar - 2 tablespoons
- Gluten-free soy sauce - 3 tablespoons
- Snow peas - 1 cup
- Broccoli florets - 2 cups
- Carrots - 2, julienned
- Bell peppers - 2, thinly sliced
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
- Gluten-free rice noodles - 8 oz
Let's Get Started
- Cook the rice noodles according to package instructions. Drain and set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and grated ginger. Stir fry for 1 minute until fragrant.
- Add the bell peppers, carrots, broccoli, and snow peas. Stir fry for 5-6 minutes until the vegetables are crisp-tender.
