Gluten Free Moroccan Chickpea Stew

Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.
  3. Add the sliced carrots, diced bell pepper, and diced sweet potato. Cook for 5 minutes, stirring occasionally.
  4. Add the canned diced tomatoes, vegetable broth, drained and rinsed chickpeas, ground cumin, ground coriander, ground turmeric, ground cinnamon, salt, and black pepper. Stir well to combine.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the vegetables are tender.
  6. Stir in the chopped fresh cilantro and fresh lemon juice.
  7. Taste and adjust the seasoning if needed.
  8. Serve the gluten-free Moroccan chickpea stew hot, garnished with additional fresh cilantro if desired.
