Gluten Free Moroccan Chickpea Stew

Ingredients - Serves 6
- Fresh lemon juice - 1 tablespoon
- Fresh cilantro - 1/4 cup, chopped
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground turmeric - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Chickpeas - 2 cans (15 oz each), drained and rinsed
- Vegetable broth - 4 cups
- Canned diced tomatoes - 1 can (14 oz)
- Sweet potato - 1, peeled and diced
- Bell pepper - 1, diced
- Carrots - 2, sliced
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.
- Add the sliced carrots, diced bell pepper, and diced sweet potato. Cook for 5 minutes, stirring occasionally.
- Add the canned diced tomatoes, vegetable broth, drained and rinsed chickpeas, ground cumin, ground coriander, ground turmeric, ground cinnamon, salt, and black pepper. Stir well to combine.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the vegetables are tender.
- Stir in the chopped fresh cilantro and fresh lemon juice.
- Taste and adjust the seasoning if needed.
- Serve the gluten-free Moroccan chickpea stew hot, garnished with additional fresh cilantro if desired.
