Marqa
Marqa is a traditional Somali stew made with meat, vegetables, and aromatic spices.
Ingredients - Serves 6
- Fresh lemon juice - 2 tablespoons
- Fresh cilantro - 1/4 cup, chopped
- Water - 4 cups
- Salt - To taste
- Cayenne pepper - 1/2 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Green bell pepper - 1, diced
- Carrots - 2 large, peeled and sliced
- Potatoes - 4 medium, peeled and cubed
- Tomatoes - 2 large, chopped
- Ginger - 1 tablespoon, grated
- Garlic - 4 cloves, minced
- Onion - 1 large, finely chopped
- Lamb or beef - 1 kg, cubed
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Add the cubed meat to the pot and brown on all sides.
- Stir in the turmeric, cumin, coriander, cayenne pepper, and salt.
- Add the chopped tomatoes and cook for 5 minutes, until they start to break down.
- Pour in the water and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes.
- Add the cubed potatoes, sliced carrots, and diced green bell pepper to the pot.
- Cover the pot again and simmer for another 20 minutes, or until the vegetables are tender.
- Stir in the chopped cilantro and fresh lemon juice.
- Taste and adjust the seasoning if needed.
- Serve the marqa hot with rice or bread.
