Gluten Free Egg Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and grated ginger, and cook for 1 minute until fragrant.
  3. Push the garlic and ginger to one side of the skillet and crack the eggs into the other side.
  4. Scramble the eggs until cooked through, then mix them with the garlic and ginger.
  5. Add the cauliflower rice and frozen mixed vegetables to the skillet.
  6. Cook for 5-7 minutes, stirring occasionally, until the cauliflower rice is tender and the vegetables are heated through.
  7. Drizzle the gluten-free soy sauce and sesame oil over the rice mixture.
  8. Stir well to combine and cook for an additional 2 minutes.
  9. Season with salt and pepper to taste.
  10. Garnish with sliced green onions before serving.
