Gluten Free Egg Fried Rice
This gluten-free version of classic egg fried rice is made with cauliflower rice and packed with flavor.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 4, sliced
- Frozen mixed vegetables - 1 cup
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Vegetable oil - 2 tablespoons
- Sesame oil - 1 tablespoon
- Gluten-free soy sauce - 2 tablespoons
- Eggs - 4
- Cauliflower rice - 4 cups
Let's Get Started
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the minced garlic and grated ginger, and cook for 1 minute until fragrant.
- Push the garlic and ginger to one side of the skillet and crack the eggs into the other side.
- Scramble the eggs until cooked through, then mix them with the garlic and ginger.
- Add the cauliflower rice and frozen mixed vegetables to the skillet.
- Cook for 5-7 minutes, stirring occasionally, until the cauliflower rice is tender and the vegetables are heated through.
- Drizzle the gluten-free soy sauce and sesame oil over the rice mixture.
- Stir well to combine and cook for an additional 2 minutes.
- Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
