Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Gluten-free breadcrumbs - 1/2 cup
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Fresh parsley - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Onion - 1/2 medium, chopped
- Chickpeas - 2 cups, cooked
Let's Get Started
- In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, salt, and black pepper. Pulse until well combined but still slightly chunky.
- Transfer the mixture to a bowl and stir in the gluten-free breadcrumbs. Let the mixture rest for 10 minutes to allow the breadcrumbs to absorb moisture.
- Shape the mixture into small patties, about 2 inches in diameter.
- Heat the olive oil in a large skillet over medium heat. Add the falafel patties and cook for 4-5 minutes per side, or until golden brown and crispy.
- Serve the falafels with your favorite gluten-free pita bread, tahini sauce, and fresh vegetables.
