  1. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. Pop the popcorn kernels using a popcorn maker or on the stovetop.
  3. In a saucepan over medium heat, melt the butter. Stir in the brown sugar, molasses, ginger, cinnamon, cloves, and salt. Bring to a boil while stirring consistently.
  4. Remove the saucepan from the heat and stir in the baking soda.
  5. Pour the caramel sauce over the popcorn. Use a spatula to toss and coat the popcorn in the sauce. Make sure all the popcorn is coated.
  6. Transfer the popcorn to the prepared baking sheet and spread it out evenly.
  7. Bake in the oven for 45 minutes, stirring every 15 minutes.
  8. Remove the gingerbread popcorn from the oven and let it cool before serving.
