  1. Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. Heat ghee in a large pot over medium heat. Add the sliced onion, cinnamon stick, cloves, cardamom pods, and bay leaf. Sauté until the onion turns golden brown.
  3. Add the drained rice to the pot and sauté for 2-3 minutes, stirring gently to coat the rice with ghee.
  4. Pour in the water and add salt. Bring to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
  5. While the rice is cooking, heat a small pan over medium heat. Add the chopped cashews and raisins. Sauté until the cashews turn golden brown and the raisins plump up.
  6. Once the rice is cooked, remove the pot from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
  7. Garnish the ghee rice with the sautéed cashews, raisins, and chopped cilantro. Serve hot as a main course or as a side dish with your favorite curry or gravy.
