Ghanaian Curry
This Ghanaian Curry is made with a flavorful blend of spices, tomatoes, and chicken.
Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Salt and pepper - To taste
- Chicken - 1 pound, cut into 1-inch cubes
- Chicken broth - 1 cup
- Tomatoes - 2 cups, diced
- Cayenne pepper - 1/4 teaspoon
- Cumin - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and ginger and cook until the onion is soft, about 5 minutes.
- Add the curry powder, cumin, and cayenne pepper and cook for 1 minute.
- Add the tomatoes, chicken broth, and chicken and bring to a boil.
- Reduce the heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
