Gemista
Gemista is a traditional Greek dish featuring tomatoes and peppers stuffed with a flavorful rice and herb filling.
Ingredients - Serves 6
- Water - 1 cup
- Salt and pepper - To taste
- Fresh mint - 1/4 cup, chopped
- Fresh parsley - 1/2 cup, chopped
- Rice - 1 cup
- Garlic - 2 cloves, minced
- Onions - 2, finely chopped
- Olive oil - 1/2 cup
- Green bell peppers - 6
- Tomatoes - 6 large
Let's Get Started
- Preheat the oven to 375°F.
- Cut the tops off the tomatoes and peppers and scoop out the insides, reserving the pulp.
- Heat the olive oil in a large pan over medium heat. Add the onions and garlic and cook until soft.
- Add the rice, parsley, mint, salt, and pepper to the pan and cook for a few minutes.
- Add the tomato and pepper pulp and water to the pan and simmer until the rice is partially cooked.
- Stuff the tomatoes and peppers with the rice mixture and place them in a baking dish.
- Bake for about 1 hour, or until the vegetables are soft and the rice is fully cooked.
