Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 375°F.
  2. Cut the tops off the tomatoes and peppers and scoop out the insides, reserving the pulp.
  3. Heat the olive oil in a large pan over medium heat. Add the onions and garlic and cook until soft.
  4. Add the rice, parsley, mint, salt, and pepper to the pan and cook for a few minutes.
  5. Add the tomato and pepper pulp and water to the pan and simmer until the rice is partially cooked.
  6. Stuff the tomatoes and peppers with the rice mixture and place them in a baking dish.
  7. Bake for about 1 hour, or until the vegetables are soft and the rice is fully cooked.
