Ingredients - Serves 8

Let's Get Started

  1. In a medium saucepan, combine the milk and cream. Warm over medium heat until foam forms around the edges.
  2. In a large bowl, beat the egg yolks and sugar until frothy. Gradually pour the warm milk into the egg yolk mixture, whisking constantly.
  3. Return the mixture to the saucepan and cook over medium heat, stirring with a wooden spoon until the mixture gels slightly and coats the back of the spoon.
  4. Pour the mixture through a sieve or fine strainer into a bowl. Cover, and chill for at least 3 hours or overnight.
  5. Stir the vanilla into the chilled mixture.
  6. Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions.
  7. Transfer the gelato to a sealed container, and freeze until firm. Let it sit at room temperature for 5 minutes before serving.
