Garlic Thyme Roasted Chicken

Let's Get Started

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken inside and out, then pat dry with paper towels.
  3. In a small bowl, combine the minced garlic, thyme leaves, olive oil, salt, and pepper.
  4. Rub the garlic-thyme mixture all over the chicken, both under the skin and on top.
  5. Place the lemon halves and the remaining thyme inside the chicken cavity.
  6. Place the chicken in a roasting pan and roast for about 1 hour and 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  7. Remove the chicken from the oven and let it rest for 10 minutes before carving.
