Garlic Thyme Roasted Chicken

Ingredients - Serves 4
- Lemon - 1, halved
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Fresh thyme - 1 bunch
- Garlic cloves - 6, minced
- Whole chicken - 1 (about 4 pounds)
Let's Get Started
- Preheat your oven to 425°F (220°C).
- Rinse the chicken inside and out, then pat dry with paper towels.
- In a small bowl, combine the minced garlic, thyme leaves, olive oil, salt, and pepper.
- Rub the garlic-thyme mixture all over the chicken, both under the skin and on top.
- Place the lemon halves and the remaining thyme inside the chicken cavity.
- Place the chicken in a roasting pan and roast for about 1 hour and 30 minutes, or until the juices run clear when you cut between a leg and thigh.
- Remove the chicken from the oven and let it rest for 10 minutes before carving.
