Garlic Butter T Bone Steak with Roasted Brussels Sprouts and Loaded Baked Potatoes

Ingredients - Serves 2
- Green onions - 2, chopped
- Sour cream - 1/2 cup
- Bacon - 4 strips, cooked and crumbled
- Cheddar cheese - 1 cup, shredded
- Potatoes - 2 large
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Brussels sprouts - 2 cups, halved
- Butter - 4 tablespoons
- Garlic - 4 cloves, minced
- T-bone steak - 2 pieces
Let's Get Started
- Preheat the oven to 400°F. Rub the potatoes with olive oil, prick with a fork, and bake for 1 hour.
- While the potatoes are baking, season the steak with salt and pepper. Heat 2 tablespoons of butter in a skillet over medium-high heat. Add the steak and cook for 4-5 minutes on each side, or until desired doneness. Add the minced garlic and remaining butter to the skillet and baste the steak for 1-2 minutes. Remove from heat and let rest.
- Toss the Brussels sprouts in olive oil, salt, and pepper. Roast in the oven for 20-25 minutes, or until crispy and golden.
- Once the potatoes are done, cut a slit in the top and fluff the inside with a fork. Top with cheddar cheese, bacon, sour cream, and green onions.
- Serve the steak with the roasted Brussels sprouts and loaded baked potatoes.
