Garlic and Ginger Shrimp Stir Fry
This flavorful shrimp stir fry is made with garlic, ginger, and a variety of colorful vegetables.
Ingredients - Serves 2
- Green onions - 2, sliced, for garnish
- Cooked rice - 2 cups, for serving
- Salt and pepper - To taste
- Water - 1/4 cup
- Cornstarch - 1 teaspoon
- Honey - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Carrots - 2 medium, sliced
- Broccoli florets - 1 cup
- Bell peppers - 1 red, sliced
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- In a small bowl, whisk together soy sauce, sesame oil, honey, cornstarch, water, garlic, and ginger. Set aside.
- Heat a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the bell peppers, broccoli, and carrots. Stir fry for 3-4 minutes, or until the vegetables are crisp-tender.
- Return the shrimp to the skillet and pour the sauce over the shrimp and vegetables. Cook for an additional 2-3 minutes, or until the sauce has thickened.
- Season with salt and pepper to taste.
- Serve the garlic and ginger shrimp stir fry over cooked rice.
