  2. Add the chicken thighs to the marinade and let them marinate for at least 1 hour, or overnight for better flavor.
  3. Heat vegetable oil in a deep pan or pot for frying.
  4. Coat each chicken thigh with cornstarch, shaking off any excess.
  5. Carefully place the chicken thighs in the hot oil and fry until golden brown and crispy, about 10-12 minutes per side.
  6. Remove the fried chicken from the oil and place them on a paper towel-lined plate to drain excess oil.
  7. Serve the Gai Tod hot with lime wedges and sweet chili sauce for dipping.
