  1. In a bowl, combine the lemongrass, garlic, fish sauce, soy sauce, honey, lime juice, and ground black pepper to make the marinade.
  2. Place the chicken thighs in a ziplock bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and brush off any excess. Reserve the marinade for basting.
  5. Brush the grill grates with vegetable oil to prevent sticking. Place the chicken thighs on the grill, skin side down, and cook for about 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C).
  6. While grilling, baste the chicken with the reserved marinade to enhance the flavor and keep it moist.
  7. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
  8. Garnish with fresh cilantro and serve with lime wedges for squeezing over the chicken.
