Frittola
Frittola is a traditional Sicilian street food. It's made from various parts of the cow, which are boiled and then fried.

- Lemon - 1, for serving
- Pepper - To taste
- Salt - To taste
- Lard - 500 g
- Beef parts (lung, trachea, spleen, etc.) - 1 kg
Let's Get Started
- Clean the beef parts thoroughly and cut them into small pieces.
- In a large pot, melt the lard over medium heat.
- Add the beef parts to the pot and cook until they are well browned.
- Cover the pot and let it simmer for about 2 hours, or until the meat is tender.
- Use a slotted spoon to remove the meat from the lard. Let it drain on paper towels.
- Season the meat with salt and pepper to taste.
- Serve the frittola hot, with a squeeze of lemon juice.
