- Red bell pepper - 1, chopped
- Onion - 1 large, chopped
- Pork loin - 500 grams, cut into chunks
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pan over medium heat.
- Add the pork and cook until browned on all sides. Remove from the pan and set aside.
- In the same pan, add the onion, peppers, and garlic. Cook until softened.
- Add the tomatoes, paprika, salt, and pepper. Cook for a few minutes until the tomatoes start to break down.
- Return the pork to the pan and stir well. Cover and simmer for about 30 minutes, until the pork is tender.
- Crack the eggs over the top of the dish. Cover and cook for a few more minutes, until the eggs are cooked to your liking.
- Serve the Fritada Aragonesa hot, with bread on the side if desired.
