Fried Rice with Shrimp and Pineapple
This delicious fried rice is packed with succulent shrimp, sweet pineapple, and flavorful vegetables.
Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Green onions - 4, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 3 tablespoons
- Eggs - 2, beaten
- Frozen peas and carrots - 1 cup
- Pineapple - 1 cup, diced
- Shrimp - 1 pound, peeled and deveined
- Cooked rice - 4 cups, chilled
Let's Get Started
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add shrimp and cook until pink and cooked through, about 2-3 minutes. Remove shrimp from the skillet and set aside.
- In the same skillet, add garlic, ginger, and green onions. Cook for 1 minute until fragrant.
- Push the garlic, ginger, and green onions to one side of the skillet and pour beaten eggs into the other side. Scramble the eggs until cooked.
- Add frozen peas and carrots to the skillet and cook for 2 minutes.
- Add chilled cooked rice, soy sauce, and sesame oil to the skillet. Stir well to combine all ingredients.
- Add cooked shrimp and diced pineapple to the skillet. Stir fry for another 2-3 minutes until everything is heated through.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
