Fried Rice with Shrimp and Pineapple

Ingredients - Serves 4

Let's Get Started

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add shrimp and cook until pink and cooked through, about 2-3 minutes. Remove shrimp from the skillet and set aside.
  3. In the same skillet, add garlic, ginger, and green onions. Cook for 1 minute until fragrant.
  4. Push the garlic, ginger, and green onions to one side of the skillet and pour beaten eggs into the other side. Scramble the eggs until cooked.
  5. Add frozen peas and carrots to the skillet and cook for 2 minutes.
  6. Add chilled cooked rice, soy sauce, and sesame oil to the skillet. Stir well to combine all ingredients.
  7. Add cooked shrimp and diced pineapple to the skillet. Stir fry for another 2-3 minutes until everything is heated through.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!
