Foie Gras Bonbons
These luxurious bonbons are a decadent treat, featuring rich foie gras encased in a sweet shell.
Ingredients - Serves 6
- Cocoa powder - For dusting
- Salt - 1 pinch
- Sugar - 50 grams
- Heavy cream - 50 ml
- White chocolate - 100 grams
- Foie gras - 200 grams
Let's Get Started
- Clean the foie gras and cut it into small pieces.
- In a pan, melt the foie gras over low heat until it becomes a liquid. Strain to remove any solids.
- In a separate pan, heat the cream and sugar until the sugar dissolves. Do not let it boil.
- Break the white chocolate into pieces and add it to the cream and sugar mixture. Stir until the chocolate is completely melted.
- Combine the melted foie gras and chocolate mixture, stirring well. Add a pinch of salt.
- Pour the mixture into a silicone mold, making sure each cavity is filled. Freeze for at least 2 hours, or until firm.
- Once the bonbons are firm, remove them from the mold and dust them with cocoa powder.
- Serve immediately, or store in the refrigerator until ready to serve.
