Ingredients - Serves 6

Let's Get Started

  1. Clean the foie gras and cut it into small pieces.
  2. In a pan, melt the foie gras over low heat until it becomes a liquid. Strain to remove any solids.
  3. In a separate pan, heat the cream and sugar until the sugar dissolves. Do not let it boil.
  4. Break the white chocolate into pieces and add it to the cream and sugar mixture. Stir until the chocolate is completely melted.
  5. Combine the melted foie gras and chocolate mixture, stirring well. Add a pinch of salt.
  6. Pour the mixture into a silicone mold, making sure each cavity is filled. Freeze for at least 2 hours, or until firm.
  7. Once the bonbons are firm, remove them from the mold and dust them with cocoa powder.
  8. Serve immediately, or store in the refrigerator until ready to serve.
