Focaccia with Roasted Squash
This delicious focaccia bread is topped with sweet roasted squash for a hearty and flavorful side dish or appetizer.
Ingredients - Serves 8
- Rosemary - 1 tablespoon, chopped
- Butternut squash - 1 medium, peeled and cubed
- Salt - 2 teaspoons
- Olive oil - 1/4 cup
- All-purpose flour - 3 1/2 cups
- Sugar - 1 teaspoon
- Warm water - 1 1/2 cups
- Active dry yeast - 1 packet
Let's Get Started
- In a large bowl, dissolve the yeast and sugar in the warm water. Let sit for 5 minutes until frothy.
- Add the flour, 2 tablespoons of the olive oil, and the salt to the yeast mixture. Stir until a dough forms.
- Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour, until doubled in size.
- Preheat the oven to 400°F. Toss the cubed squash with the remaining olive oil and spread out on a baking sheet. Roast for 20 minutes, until tender and slightly caramelized.
- Punch down the dough and press it into a greased baking sheet, creating dimples with your fingers. Top with the roasted squash and rosemary.
- Bake for 20-25 minutes, until the focaccia is golden brown. Let cool slightly before cutting and serving.
