Focaccia with Roasted Squash

Ingredients - Serves 8

Let's Get Started

  1. In a large bowl, dissolve the yeast and sugar in the warm water. Let sit for 5 minutes until frothy.
  2. Add the flour, 2 tablespoons of the olive oil, and the salt to the yeast mixture. Stir until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour, until doubled in size.
  5. Preheat the oven to 400°F. Toss the cubed squash with the remaining olive oil and spread out on a baking sheet. Roast for 20 minutes, until tender and slightly caramelized.
  6. Punch down the dough and press it into a greased baking sheet, creating dimples with your fingers. Top with the roasted squash and rosemary.
  7. Bake for 20-25 minutes, until the focaccia is golden brown. Let cool slightly before cutting and serving.
