Filetto al Peposo
Filetto al Peposo is a traditional Tuscan dish. It's a tender beef fillet cooked in a rich red wine and black pepper sauce.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Salt - To taste
- Rosemary - 1 sprig
- Tomato paste - 2 tablespoons
- Red wine - 750 ml
- Garlic - 2 cloves, minced
- Black peppercorns - 2 tablespoons, crushed
- Beef fillet - 800 grams
Let's Get Started
- Season the beef fillet with salt and the crushed black peppercorns.
- Heat the olive oil in a large pot over medium heat. Add the beef and sear on all sides until browned. Remove the beef from the pot and set aside.
- In the same pot, add the minced garlic and cook until fragrant.
- Add the tomato paste and red wine to the pot. Stir well to combine.
- Return the beef to the pot. Add the rosemary sprig.
- Cover the pot and simmer for about 2 hours, or until the beef is tender.
- Remove the rosemary sprig before serving. The beef can be sliced and served with the sauce.
