  1. Season the beef fillet with salt and the crushed black peppercorns.
  2. Heat the olive oil in a large pot over medium heat. Add the beef and sear on all sides until browned. Remove the beef from the pot and set aside.
  3. In the same pot, add the minced garlic and cook until fragrant.
  4. Add the tomato paste and red wine to the pot. Stir well to combine.
  5. Return the beef to the pot. Add the rosemary sprig.
  6. Cover the pot and simmer for about 2 hours, or until the beef is tender.
  7. Remove the rosemary sprig before serving. The beef can be sliced and served with the sauce.
