  1. Preheat the oven to 220°C (425°F).
  2. Score the skin of the pork roast with a sharp knife, making diagonal cuts about 1 cm apart.
  3. Rub the salt, pepper, garlic powder, and caraway seeds all over the pork, including the scored skin.
  4. Place the pork roast on a rack in a roasting pan, with the skin side up.
  5. Roast the pork in the preheated oven for 30 minutes to crisp up the skin.
  6. Reduce the oven temperature to 180°C (350°F) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 70°C (160°F).
  7. While the pork is roasting, boil the potatoes in salted water until tender. Drain and set aside.
  8. Once the pork is cooked, remove it from the oven and let it rest for 10 minutes before carving.
  9. In the meantime, melt the butter in a pan and add the boiled potatoes. Sauté until golden and crispy.
  10. Serve the flæskesteg with the crispy potatoes, pickled red cabbage, and gravy.
