Let's Get Started
- Preheat the oven to 220°C (425°F).
- Score the skin of the pork roast with a sharp knife, making diagonal cuts about 1 cm apart.
- Rub the salt, pepper, garlic powder, and caraway seeds all over the pork, including the scored skin.
- Place the pork roast on a rack in a roasting pan, with the skin side up.
- Roast the pork in the preheated oven for 30 minutes to crisp up the skin.
- Reduce the oven temperature to 180°C (350°F) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 70°C (160°F).
- While the pork is roasting, boil the potatoes in salted water until tender. Drain and set aside.
- Once the pork is cooked, remove it from the oven and let it rest for 10 minutes before carving.
- In the meantime, melt the butter in a pan and add the boiled potatoes. Sauté until golden and crispy.
- Serve the flæskesteg with the crispy potatoes, pickled red cabbage, and gravy.
