- Salt - To taste
- Heavy cream - 1 cup
- Brandy - 1/2 cup
- Olive oil - 2 tablespoons
- Butter - 2 tablespoons
- Green peppercorns - 2 tablespoons
- Beef fillet - 4 pieces, 200g each
Let's Get Started
- Season the beef fillets with salt.
- Heat the butter and olive oil in a pan over high heat.
- Add the beef fillets and sear on both sides until browned, about 3 minutes per side.
- Remove the fillets from the pan and set aside.
- Add the green peppercorns to the pan and cook for 1 minute.
- Add the brandy to the pan and let it reduce by half.
- Lower the heat and add the heavy cream. Stir well and let it simmer for a few minutes until the sauce thickens.
- Return the fillets to the pan and cook for a few more minutes, depending on your preferred level of doneness.
- Serve the fillets with the green peppercorn sauce.
