Filet de Boeuf aux Champignons

- Parsley - 2 tablespoons, chopped
- Butter - 2 tablespoons
- Heavy cream - 1/2 cup
- Dry white wine - 1/2 cup
- Shallot - 1, minced
- Garlic - 2 cloves, minced
- Mushrooms - 1 pound, sliced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Filet mignon - 4 (6-ounce) pieces
