Fesenjan
Fesenjan is a traditional Persian dish made with chicken, pomegranate molasses, and ground walnuts.
Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Water - 1 cup
- Salt and pepper - To taste
- Ground turmeric - 1/2 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Sugar - 2 tablespoons
- Pomegranate molasses - 1/2 cup
- Ground walnuts - 1 cup
- Onion - 1 large, finely chopped
- Chicken - 1 whole, cut into pieces
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and cook until golden brown, about 5 minutes.
- Add the chicken pieces and cook until browned on all sides.
- Add the ground walnuts, pomegranate molasses, sugar, ground cinnamon, ground turmeric, salt, and pepper. Stir well to combine.
- Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 1 hour, or until the chicken is cooked through and tender.
- Remove the chicken pieces from the pot and set aside.
- Using an immersion blender or a food processor, blend the sauce until smooth.
- Return the chicken pieces to the pot and simmer for an additional 10 minutes.
- Serve the Fesenjan hot with steamed rice.
