Ingredients - Serves 6

Let's Get Started

  1. Rinse the black beans and soak them in water overnight. Drain and set aside.
  2. In a large pot, cook the bacon until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
  3. Add the pork shoulder to the pot and cook until browned on all sides. Remove the pork and set aside.
  4. Add the sliced smoked sausage to the pot and cook until browned. Remove the sausage and set aside.
  5. In the same pot, sauté the chopped onion and minced garlic until softened.
  6. Return the bacon, pork shoulder, and smoked sausage to the pot. Add the soaked black beans, bay leaves, salt, and pepper.
  7. Cover the ingredients with water and bring to a boil. Reduce the heat to low and simmer for about 2 hours, or until the beans are tender and the flavors have melded together.
  8. While the feijoada is simmering, prepare the collard greens by blanching them in boiling water for a few minutes. Drain and set aside.
  9. Serve the feijoada hot with cooked rice, collard greens, and orange slices on the side.
  10. Enjoy this hearty and flavorful Brazilian feijoada!
