Feijoada
Feijoada is a traditional Brazilian black bean stew made with various cuts of pork and served with rice, collard greens, and orange slices.
Ingredients - Serves 6
- Orange slices - For serving
- Rice - 2 cups, cooked
- Collard greens - 1 bunch, chopped
- Ground black pepper - To taste
- Salt - To taste
- Bay leaves - 2
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Bacon - 4 slices, chopped
- Smoked sausage - 1 lb, sliced
- Pork shoulder - 1 lb, cubed
- Black beans - 2 cups, dried
Let's Get Started
- Rinse the black beans and soak them in water overnight. Drain and set aside.
- In a large pot, cook the bacon until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
- Add the pork shoulder to the pot and cook until browned on all sides. Remove the pork and set aside.
- Add the sliced smoked sausage to the pot and cook until browned. Remove the sausage and set aside.
- In the same pot, sauté the chopped onion and minced garlic until softened.
- Return the bacon, pork shoulder, and smoked sausage to the pot. Add the soaked black beans, bay leaves, salt, and pepper.
- Cover the ingredients with water and bring to a boil. Reduce the heat to low and simmer for about 2 hours, or until the beans are tender and the flavors have melded together.
- While the feijoada is simmering, prepare the collard greens by blanching them in boiling water for a few minutes. Drain and set aside.
- Serve the feijoada hot with cooked rice, collard greens, and orange slices on the side.
