Fava Bean and Sausage Cassoulet
This hearty and flavorful cassoulet is made with fava beans, sausage, and a variety of aromatic vegetables.
Ingredients - Serves 6
- Parsley - 2 tablespoons, chopped
- Breadcrumbs - 1 cup
- Salt and pepper - To taste
- Bay leaf - 1
- Thyme - 1 teaspoon
- Chicken broth - 4 cups
- Tomato paste - 2 tablespoons
- Garlic - 3 cloves, minced
- Celery - 2 stalks, diced
- Carrots - 2 medium, diced
- Onion - 1 large, chopped
- Sausage - 1 pound, sliced
- Fava beans - 2 cups, dried
Let's Get Started
- Soak the dried fava beans in water overnight. Drain and rinse.
- In a large pot, cook the sausage over medium heat until browned. Remove from the pot and set aside.
- In the same pot, add the chopped onion, diced carrots, diced celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the tomato paste and cook for another 2 minutes.
- Return the sausage to the pot and add the soaked fava beans, chicken broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 1 hour, or until the beans are tender.
- Preheat the oven to 375°F.
- Transfer the cassoulet to a baking dish. Sprinkle the breadcrumbs over the top.
- Bake for 15 minutes, or until the breadcrumbs are golden and crispy.
- Garnish with chopped parsley before serving.
