Fava Bean and Roasted Garlic Bruschetta
This delicious bruschetta is made with fresh fava beans, roasted garlic, and crusty bread.
Ingredients - Serves 6
- Parmesan cheese - 1/4 cup, grated
- Fresh basil - 1/4 cup, chopped
- Crusty bread - 1 loaf, sliced
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Garlic - 1 head
- Fava beans - 2 cups, shelled
Let's Get Started
- Preheat the oven to 400°F.
- Cut off the top of the garlic head to expose the cloves. Drizzle with olive oil and wrap in aluminum foil. Roast in the oven for 30 minutes, or until the garlic cloves are soft and golden.
- Meanwhile, bring a pot of water to a boil. Add the shelled fava beans and cook for 2 minutes. Drain and transfer to a bowl of ice water to cool. Peel off the outer skins of the fava beans.
- In a food processor, combine the roasted garlic cloves, fava beans, olive oil, lemon juice, salt, and black pepper. Pulse until smooth.
- Toast the sliced crusty bread in the oven or on a grill until lightly browned.
- Spread the fava bean mixture onto the toasted bread slices.
- Sprinkle with chopped fresh basil and grated Parmesan cheese.
- Serve immediately and enjoy!
