Fava Bean and Herbed Ricotta Crostini
These delicious crostini are topped with creamy herbed ricotta and flavorful fava beans.
Ingredients - Serves 6
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon zest - 1 teaspoon
- Fresh herbs (such as basil, parsley, and chives) - 1/4 cup, chopped
- Ricotta cheese - 1 cup
- Fava beans - 1 cup, shelled
- Baguette - 1
Let's Get Started
- Preheat the oven to 375°F.
- Slice the baguette into 1/2-inch thick slices and arrange them on a baking sheet.
- Drizzle the bread slices with olive oil and sprinkle with salt and pepper.
- Bake for 10 minutes, or until the bread is toasted and crispy.
- In a bowl, combine the ricotta cheese, chopped herbs, lemon zest, salt, and pepper. Mix well.
- In a separate pot, bring water to a boil and blanch the fava beans for 2 minutes. Drain and rinse with cold water.
- Remove the outer skin from the fava beans.
- Spread a generous amount of the herbed ricotta mixture onto each toasted baguette slice.
- Top the ricotta with a few fava beans.
- Drizzle with olive oil and sprinkle with additional salt and pepper, if desired.
- Serve the crostini immediately and enjoy!
