Fava Bean and Herbed Ricotta Crostini

Let's Get Started

  1. Preheat the oven to 375°F.
  2. Slice the baguette into 1/2-inch thick slices and arrange them on a baking sheet.
  3. Drizzle the bread slices with olive oil and sprinkle with salt and pepper.
  4. Bake for 10 minutes, or until the bread is toasted and crispy.
  5. In a bowl, combine the ricotta cheese, chopped herbs, lemon zest, salt, and pepper. Mix well.
  6. In a separate pot, bring water to a boil and blanch the fava beans for 2 minutes. Drain and rinse with cold water.
  7. Remove the outer skin from the fava beans.
  8. Spread a generous amount of the herbed ricotta mixture onto each toasted baguette slice.
  9. Top the ricotta with a few fava beans.
  10. Drizzle with olive oil and sprinkle with additional salt and pepper, if desired.
  11. Serve the crostini immediately and enjoy!
