Fava Bean and Chorizo Stew
This hearty stew combines fava beans and chorizo sausage for a flavorful and satisfying meal.
Ingredients - Serves 6
- Lime - 1, juiced
- Fresh cilantro - 1/4 cup, chopped
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Chicken broth - 4 cups
- Tomatoes - 1 can (14 ounces), diced
- Fava beans - 2 cups, shelled
- Red bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Chorizo sausage - 12 ounces, sliced
Let's Get Started
- In a large pot, cook the chorizo sausage over medium heat until browned. Remove from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the diced red bell pepper and cook for another 2 minutes.
- Add the shelled fava beans, diced tomatoes, chicken broth, paprika, cumin, salt, and pepper. Stir well to combine.
- Bring the stew to a boil, then reduce the heat and simmer for 30 minutes, or until the fava beans are tender.
- Stir in the cooked chorizo sausage and simmer for an additional 5 minutes.
- Remove from heat and stir in the chopped cilantro and lime juice.
- Serve hot and enjoy!
