Farro Salad with Grilled Eggplant, Tomatoes, and Basil
A hearty and healthy salad featuring farro, grilled eggplant, fresh tomatoes, and basil.
Ingredients - Serves 4
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons
- Fresh basil leaves - 1/2 cup, torn
- Cherry tomatoes - 1 cup, halved
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Eggplant - 1 large, sliced
- Farro - 1 cup
Let's Get Started
- Cook the farro according to the package instructions. Drain and set aside.
- Preheat a grill or grill pan to medium heat.
- Brush the eggplant slices with olive oil and season with salt and pepper. Grill for 3-4 minutes on each side, until tender and charred.
- In a large bowl, combine the cooked farro, grilled eggplant, cherry tomatoes, and basil.
- In a small bowl, whisk together the lemon juice, remaining olive oil, garlic, salt, and pepper. Pour over the salad and toss to combine.
