Falafel and Hummus Pita Pockets
These delicious pita pockets are filled with homemade falafel, creamy hummus, and fresh vegetables.
Ingredients - Serves 4
- Lettuce - 4 leaves
- Cucumber - 1/2, sliced
- Tomato - 1, sliced
- Hummus - 1/2 cup
- Pita bread - 4 rounds
- Vegetable oil - 2 tablespoons
- All-purpose flour - 1/4 cup
- Baking powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Fresh parsley - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Onion - 1/2 medium, chopped
- Chickpeas - 1 can (15 oz), drained and rinsed
Let's Get Started
- In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, salt, black pepper, baking powder, and flour. Pulse until well combined and the mixture holds together.
- Form the mixture into small patties, about 1 inch in diameter.
- Heat the vegetable oil in a large skillet over medium heat. Cook the falafel patties for 3-4 minutes per side, or until golden brown and crispy.
- Warm the pita bread in a toaster or oven.
- Spread a generous amount of hummus inside each pita pocket.
- Place 2-3 falafel patties inside each pita pocket.
- Add sliced tomato, cucumber, and lettuce to each pita pocket.
- Serve the falafel and hummus pita pockets immediately and enjoy!
