Fagioli E Cotiche
Fagioli e Cotiche is a traditional Italian dish, a hearty bean and pork rind soup perfect for cold winter days.
Ingredients - Serves 6
- Extra virgin olive oil - 2 tablespoons
- Salt and pepper - To taste
- Rosemary - 1 sprig
- Tomato paste - 2 tablespoons
- Celery - 1 stalk, chopped
- Carrot - 1, chopped
- Onion - 1, chopped
- Garlic - 2 cloves, minced
- Pork rind - 200 grams
- Dried cannellini beans - 1 cup
Let's Get Started
- Soak the beans overnight in plenty of water.
- In a large pot, heat the olive oil over medium heat. Add the onion, carrot, celery, and garlic and cook until softened.
- Add the pork rind and cook until it starts to brown.
- Drain the beans and add them to the pot. Add enough water to cover the beans and pork rind.
- Add the tomato paste, rosemary, salt, and pepper. Stir well to combine.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the beans are tender and the soup has thickened.
- Adjust the seasoning if necessary and serve hot.
