  1. Soak the beans overnight in plenty of water.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrot, celery, and garlic and cook until softened.
  3. Add the pork rind and cook until it starts to brown.
  4. Drain the beans and add them to the pot. Add enough water to cover the beans and pork rind.
  5. Add the tomato paste, rosemary, salt, and pepper. Stir well to combine.
  6. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the beans are tender and the soup has thickened.
  7. Adjust the seasoning if necessary and serve hot.
