Fabada Asturiana
Fabada Asturiana is a traditional Spanish dish from the region of Asturias. It is a hearty and flavorful bean stew made with white beans, pork, and sausages.
Ingredients - Serves 6
- Water - 1 liter
- Salt and pepper - To taste
- Bay leaves - 2
- Smoked paprika - 1 tablespoon
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Pancetta or bacon - 200 grams, diced
- Morcilla sausage - 200 grams, sliced
- Chorizo sausage - 200 grams, sliced
- White beans - 500 grams
Let's Get Started
- Soak the white beans in water overnight.
- In a large pot, heat some olive oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the diced pancetta or bacon, chorizo sausage, and morcilla sausage. Cook until the meats are browned.
- Add the soaked white beans, bay leaves, smoked paprika, salt, pepper, and water to the pot.
- Bring the mixture to a boil, then reduce the heat to low and simmer for about 2-3 hours, or until the beans are tender and the flavors have melded together.
- Remove the bay leaves and serve the Fabada Asturiana hot.
- Optionally, you can serve it with crusty bread and a glass of red wine.
