  1. Rinse the lentils, bulgur, and rice under cold water.
  2. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until soft.
  3. Add the tomato paste, red pepper paste, dried mint, paprika, salt, and pepper. Stir well to combine.
  4. Add the lentils, bulgur, and rice to the pot. Stir well to coat in the onion and spice mixture.
  5. Add the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the lentils and grains are soft.
  6. Taste and adjust the seasoning if necessary. Serve hot.
