Ezogelin Corbasi
Ezogelin Corbasi is a traditional Turkish soup, named after Ezo the bride. This hearty soup is made with red lentils, bulgur, and rice.
Ingredients - Serves 4
- Water - 6 cups
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Dried mint - 1 teaspoon
- Red pepper paste - 1 tablespoon
- Tomato paste - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Rice - 1/4 cup
- Bulgur - 1/2 cup
- Red lentils - 1 cup
Let's Get Started
- Rinse the lentils, bulgur, and rice under cold water.
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until soft.
- Add the tomato paste, red pepper paste, dried mint, paprika, salt, and pepper. Stir well to combine.
- Add the lentils, bulgur, and rice to the pot. Stir well to coat in the onion and spice mixture.
- Add the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the lentils and grains are soft.
- Taste and adjust the seasoning if necessary. Serve hot.
