- Pork fat - 100 grams
- Coriander - 1 bunch, chopped
- Stale bread - 500 grams
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- White wine - 1 cup
- Paprika - 1 tablespoon
- Garlic - 4 cloves, minced
- Pork ribs - 1 kg
Let's Get Started
- Season the pork ribs with garlic, paprika, salt, pepper, and white wine. Let it marinate for at least 2 hours.
- Preheat the oven to 180°C.
- Place the ribs in a baking dish, drizzle with olive oil, and roast for about 1 hour.
- While the ribs are roasting, prepare the migas: Soak the stale bread in water and squeeze out the excess. Heat the pork fat in a pan, add the bread and coriander, and cook until the bread absorbs all the fat.
- Serve the roasted ribs with the migas on the side.
