Endive and Sausage Stuffing
This delicious stuffing combines the bitterness of endive with the savory flavors of sausage and herbs.
Ingredients - Serves 6
- Butter - 2 tablespoons
- Salt and pepper - To taste
- Fresh sage - 1 tablespoon, chopped
- Fresh parsley - 1/4 cup, chopped
- Chicken broth - 1 cup
- Bread cubes - 4 cups
- Garlic - 3 cloves, minced
- Celery - 2 stalks, diced
- Onion - 1 large, diced
- Italian sausage - 1 pound, casings removed
- Endive - 4 heads, chopped
Let's Get Started
- Preheat the oven to 350°F.
- In a large skillet, cook the Italian sausage over medium heat until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, melt the butter and add the onion, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the chopped endive to the skillet and cook until wilted, about 3 minutes.
- In a large mixing bowl, combine the cooked sausage, cooked vegetables, bread cubes, chicken broth, parsley, sage, salt, and pepper. Mix well to combine.
- Transfer the stuffing mixture to a greased baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes, or until the top is golden brown.
- Serve hot as a delicious side dish.
