Enchiladas de Mariscos
These seafood enchiladas are filled with shrimp, crab, and scallops, and topped with a creamy white sauce.

- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Monterey jack cheese - 1 cup, shredded
- Flour tortillas - 8
- Sour cream - 1 cup
- Tomato sauce - 1 can (8 ounces)
- Red bell pepper - 1 medium, chopped
- Green bell pepper - 1 medium, chopped
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Scallops - 1/2 pound, cooked
- Crab meat - 1/2 pound, cooked
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- Preheat the oven to 350°F.
- In a large skillet, sauté the onion, garlic, and bell peppers until tender.
- Add the shrimp, crab, scallops, and tomato sauce. Cook for 5 minutes, or until the seafood is cooked through.
- Remove from heat and stir in the sour cream and cilantro.
- Season with salt and pepper to taste.
- Spoon the seafood mixture onto each tortilla and roll up tightly.
- Place the rolled tortillas in a baking dish and top with the shredded cheese.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
