Enchiladas
These delicious chicken enchiladas are filled with seasoned shredded chicken, cheese, and smothered in a flavorful enchilada sauce.
Ingredients - Serves 6
- Chopped fresh cilantro - 1/4 cup
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Ground cumin - 1 teaspoon
- Minced garlic - 2 cloves
- Diced onion - 1/2 cup
- Shredded cheese (cheddar or mexican blend) - 2 cups
- Enchilada sauce - 2 cups
- Flour tortillas - 12
- Cooked chicken breast - 2 cups, shredded
Let's Get Started
- Preheat the oven to 375°F.
- In a large skillet, heat some oil over medium heat. Add the diced onion and minced garlic, and cook until softened.
- Add the shredded chicken, ground cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and cook for a few minutes until heated through.
- Pour 1/2 cup of enchilada sauce into the bottom of a baking dish.
- Take a flour tortilla and spoon some of the chicken mixture onto the center. Roll it up tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas and chicken mixture.
- Pour the remaining enchilada sauce over the rolled tortillas, making sure they are fully covered.
- Sprinkle the shredded cheese over the top of the enchiladas.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped fresh cilantro before serving.
