Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat some oil over medium heat. Add the diced onion and minced garlic, and cook until softened.
  3. Add the shredded chicken, ground cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and cook for a few minutes until heated through.
  4. Pour 1/2 cup of enchilada sauce into the bottom of a baking dish.
  5. Take a flour tortilla and spoon some of the chicken mixture onto the center. Roll it up tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas and chicken mixture.
  6. Pour the remaining enchilada sauce over the rolled tortillas, making sure they are fully covered.
  7. Sprinkle the shredded cheese over the top of the enchiladas.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped fresh cilantro before serving.
