BBQ Pulled Pork Burrito

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 325°F.
  2. Season the pork shoulder with salt, pepper, cumin, and chili powder.
  3. Heat a large oven-safe pot or Dutch oven over medium-high heat. Add the pork shoulder and sear on all sides until browned.
  4. Remove the pork shoulder from the pot and set aside.
  5. In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.
  6. Add the BBQ sauce to the pot and stir to combine with the onion and garlic.
  7. Return the pork shoulder to the pot and cover with the BBQ sauce mixture.
  8. Cover the pot with a lid and transfer to the preheated oven.
  9. Cook for 3-4 hours, or until the pork is tender and easily shreds with a fork.
  10. Remove the pork from the pot and shred it using two forks.
  11. Warm the flour tortillas in a dry skillet or microwave.
  12. Place a generous amount of pulled pork onto each tortilla.
  13. Top with shredded lettuce, diced tomatoes, sliced avocado, sour cream, and chopped cilantro.
  14. Fold the sides of the tortilla over the filling and roll it up tightly.
  15. Serve the BBQ pulled pork burritos warm and enjoy!
