BBQ Pulled Pork Burrito
This delicious BBQ pulled pork burrito is filled with tender pulled pork, tangy BBQ sauce, and flavorful toppings.
Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Sour cream - 1/2 cup
- Sliced avocado - 1
- Diced tomatoes - 1 cup
- Shredded lettuce - 1 cup
- Flour tortillas - 4
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Bbq sauce - 1 cup
- Pork shoulder - 2 pounds
Let's Get Started
- Preheat the oven to 325°F.
- Season the pork shoulder with salt, pepper, cumin, and chili powder.
- Heat a large oven-safe pot or Dutch oven over medium-high heat. Add the pork shoulder and sear on all sides until browned.
- Remove the pork shoulder from the pot and set aside.
- In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.
- Add the BBQ sauce to the pot and stir to combine with the onion and garlic.
- Return the pork shoulder to the pot and cover with the BBQ sauce mixture.
- Cover the pot with a lid and transfer to the preheated oven.
- Cook for 3-4 hours, or until the pork is tender and easily shreds with a fork.
- Remove the pork from the pot and shred it using two forks.
- Warm the flour tortillas in a dry skillet or microwave.
- Place a generous amount of pulled pork onto each tortilla.
- Top with shredded lettuce, diced tomatoes, sliced avocado, sour cream, and chopped cilantro.
- Fold the sides of the tortilla over the filling and roll it up tightly.
- Serve the BBQ pulled pork burritos warm and enjoy!
