Eight Treasure Rice
Eight-Treasure Rice is a traditional Chinese dessert made from glutinous rice and eight different fruits and nuts.
Ingredients - Serves 4
- Red bean paste - 1 cup
- Sugar - 1 cup
- Candied cherries - 8
- Candied winter melon - 1/4 cup, chopped
- Almonds - 1/4 cup, chopped
- Walnuts - 1/4 cup, chopped
- Lotus seeds - 1/4 cup
- Red jujubes - 8, pitted
- Water - 4 cups
- Glutinous rice - 2 cups
Let's Get Started
- Soak the glutinous rice in water for 4 hours, then drain.
- Cook the rice in a rice cooker with 4 cups of water.
- While the rice is cooking, prepare the eight treasures: soak the red jujubes, lotus seeds, walnuts, almonds, candied winter melon, and candied cherries in warm water for 30 minutes, then drain.
- In a large bowl, mix the cooked rice with the sugar and red bean paste.
- In a round cake pan, arrange the eight treasures in a decorative pattern.
- Spoon the rice mixture into the pan, pressing it down firmly.
- Steam the rice for 1 hour over high heat.
- Let the rice cool completely before turning it out onto a plate. Serve at room temperature.
