Let's Get Started

  1. In a large bowl, combine the flour and butter. Use your fingers to rub the butter into the flour until it resembles coarse crumbs.
  2. Gradually add the ice water, stirring until the dough comes together.
  3. Turn the dough out onto a lightly floured surface and knead briefly until smooth.
  4. Divide the dough into 12 equal pieces and press each piece into the bottom and up the sides of a muffin tin.
  5. Preheat your oven to 375°F (190°C).
  6. In a separate bowl, whisk together the eggs, milk, sugar, and vanilla extract.
  7. Pour the egg mixture into the tart shells, filling each one about 3/4 full.
  8. Bake for 20-25 minutes, or until the crust is golden and the filling is set.
  9. Allow the tarts to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
