Egg Tarts
A delicious and classic Chinese dessert, these egg tarts have a flaky crust and a custard-like filling.
Ingredients - Serves 12
- Vanilla extract - 1 teaspoon
- Granulated sugar - 3/4 cup
- Whole milk - 1 cup
- Eggs - 3 large
- Ice water - 1/4 cup
- Unsalted butter - 1 cup, cold and cubed
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, combine the flour and butter. Use your fingers to rub the butter into the flour until it resembles coarse crumbs.
- Gradually add the ice water, stirring until the dough comes together.
- Turn the dough out onto a lightly floured surface and knead briefly until smooth.
- Divide the dough into 12 equal pieces and press each piece into the bottom and up the sides of a muffin tin.
- Preheat your oven to 375°F (190°C).
- In a separate bowl, whisk together the eggs, milk, sugar, and vanilla extract.
- Pour the egg mixture into the tart shells, filling each one about 3/4 full.
- Bake for 20-25 minutes, or until the crust is golden and the filling is set.
- Allow the tarts to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
