Edamame Lentil Stew

Ingredients - Serves 6
- Parsley - For garnish
- Salt and pepper - To taste
- Vegetable broth - 6 cups
- Edamame - 1 cup, shelled
- Green lentils - 1 cup
- Celery - 2 stalks, diced
- Carrots - 2, diced
- Garlic - 3 cloves, minced
- Onion - 1 large, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrots, and celery and cook until the vegetables are soft, about 10 minutes.
- Add the lentils, edamame, and vegetable broth. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
