Edamame Fried Rice
A healthy and delicious twist on traditional fried rice, this edamame fried rice is packed with vegetables and flavor.
Ingredients - Serves 4
- Green onions - 2, sliced
- Eggs - 2, beaten
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Peas - 1 cup
- Carrots - 1 cup, diced
- Edamame - 1 cup, shelled and cooked
- Cooked rice - 3 cups
Let's Get Started
- Heat the sesame oil in a large skillet or wok over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the carrots and peas and cook until the vegetables are tender, about 5 minutes.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until they are cooked through, about 2 minutes.
- Add the rice, edamame, and soy sauce to the skillet. Stir everything together and cook until the rice is heated through, about 5 minutes.
- Top with the sliced green onions before serving.
