Edamame Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. Heat the sesame oil in a large skillet or wok over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the carrots and peas and cook until the vegetables are tender, about 5 minutes.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until they are cooked through, about 2 minutes.
  5. Add the rice, edamame, and soy sauce to the skillet. Stir everything together and cook until the rice is heated through, about 5 minutes.
  6. Top with the sliced green onions before serving.
