Edamame Coconut Curry
A delicious and hearty curry made with edamame, coconut milk, and a blend of spices.
Ingredients - Serves 4
- Cilantro - For garnish
- Salt and pepper - To taste
- Tomatoes - 2, chopped
- Coconut milk - 1 can
- Edamame - 2 cups, shelled
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and ginger and cook until the onion is soft, about 5 minutes.
- Add the curry powder and cook for another minute.
- Add the edamame, coconut milk, and tomatoes. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve the curry over rice and garnish with cilantro.
