Edamame and Shiitake Fried Rice
A delicious and healthy twist on traditional fried rice, this recipe uses edamame and shiitake mushrooms for added flavor and nutrition.
Ingredients - Serves 4
- Eggs - 2, beaten
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Green onions - 1/4 cup, chopped
- Carrots - 1/2 cup, diced
- Shiitake mushrooms - 1 cup, sliced
- Edamame - 1 cup, shelled and cooked
- Cooked rice - 3 cups
Let's Get Started
- Heat the sesame oil in a large skillet or wok over medium heat.
- Add the garlic and cook until fragrant, about 1 minute.
- Add the shiitake mushrooms and carrots and cook until tender, about 5 minutes.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
- Add the cooked rice, edamame, and soy sauce to the skillet. Stir to combine all ingredients.
- Cook for another 5 minutes, until the rice is heated through.
- Garnish with the chopped green onions before serving.
