Edamame and Shiitake Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. Heat the sesame oil in a large skillet or wok over medium heat.
  2. Add the garlic and cook until fragrant, about 1 minute.
  3. Add the shiitake mushrooms and carrots and cook until tender, about 5 minutes.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
  5. Add the cooked rice, edamame, and soy sauce to the skillet. Stir to combine all ingredients.
  6. Cook for another 5 minutes, until the rice is heated through.
  7. Garnish with the chopped green onions before serving.
