Drunken Noodles
Drunken Noodles, also known as Pad Kee Mao, is a popular Thai stir-fried noodle dish with a spicy and savory flavor.
Ingredients - Serves 2
- Lime - 1, cut into wedges
- Basil leaves - 1/2 cup
- Brown sugar - 1 tbsp
- Soy sauce - 1 tbsp
- Oyster sauce - 2 tbsp
- Fish sauce - 2 tbsp
- Onion - 1, thinly sliced
- Bell peppers - 1, thinly sliced
- Chicken or shrimp - 8 oz, sliced
- Thai chili peppers - 2, thinly sliced
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tbsp
- Rice noodles - 8 oz
Let's Get Started
- Cook the rice noodles according to package instructions. Drain and set aside.
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and sliced Thai chili peppers. Stir-fry for about 1 minute until fragrant.
- Add the chicken or shrimp to the pan and cook until they are cooked through.
- Add the sliced bell peppers and onion to the pan. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
- In a small bowl, mix together the fish sauce, oyster sauce, soy sauce, and brown sugar. Pour the sauce mixture into the pan and stir to coat the ingredients.
- Add the cooked rice noodles to the pan and toss everything together until well combined.
- Add the basil leaves and stir-fry for another minute until the basil wilts.
- Remove from heat and serve the drunken noodles hot, garnished with lime wedges.
